Have a Ball!
A zucchini ball that is! If you haven't already tried these, you're missing out on one of the most perfect summer foods. Tender, mild zucchini - round and perfect for stuffing. They look as amazing as they taste. Surprise your family tonight with this easy recipe:
8-10 8-ball zucchini
1 lb. bulk sausage
1 med onion, chopped
1 med red or yellow pepper, diced
8-10 slices Swiss cheese
Preheat oven to 375
Cut tops off zucchini. Hollow out with small spoon leaving approximately 1/4 inch walls. Arrange in baking dish. Set aside. Brown sausage. Drain. Add onions and peppers and saute until vegetables are tender. Fill zucchini shells with sausage mixture. Cover and bake for approximately 40 minutes or until zucchini is fork tender. Uncover, top with cheese slices and bake until cheese is bubbly.
15 min. prep time. 45 min. cook time.
Cook time can be reduced by microwaving or steaming empty zucchini shells before stuffing.
Variation: Use your imagination! Stuff with your favorite fixin's!
